We've created our first flavor of goat milk fudge, which is low in lactose and high in deliciousness.
Bloomsdale is our flagship award winning cheese. Named after the area where our farm and creamery resides. We decided to choose the name "Bloomsdale" because its shape reminds us of the hills surrounding where our farm resides. Considered a mold ripened cheese, this cheese is rolled in a mixture of pine ash and salt, then it is aged until it forms a beautiful bloom of white mold. The cheese will deepen in flavors and develops some blue cheese flavor notes, though it is not a true blue cheese.
Our Miette is a bloomy rind goat cheese made right here at Baetje Farms! This cheese has the flavor of sweet, very yeasty bread dough waiting to be baked. It has the aroma of fermented grapes and the creamy consistency much like that of a baked cheesecake as it melts in your mouth. This cheese is truly a delight and is a special treat to enjoy anytime!
Coeur du Clos is a camembert type cheese made from a blend of goat and sheep milk making this a true rare artisan cheese treat. This cheese is covered with a velvety rind reminiscent of soft wool. The cheese is best enjoyed at room temperature and has a balance of a soft creamy paste, yet a firm chewy rind. The flavor notes vary from sweet custard, roasted walnuts and clean fresh cream in the paste to the hint of mushrooms towards the rind.
Beer Washed Vallée is a reblochon style made with 100% goat milk washed in a whiskey stout made by Boulevard in Kansas City Missouri. Semi-soft paste with flavor notes of sweet cream, bacon and toasted onion, aromas of hops with a beautiful velvety rind of amber color.
Our traditional Marinated Aged Feta made from goats milk and aged for 3 months. We steep herbs, peppercorns, basil & garlic in a blend of extra virgin olive oil and canola oil.
Our Amoureux Aged Cheese is modeled after the French Morbier Cheese. It is made from 100% goats milk and has a distinctive horizontal line of ash through the center. The Amoureux is a hard dry cheese aged around 6 months. It is very nice on a cheese board or could be shredded, shaved, or grated on your favorite dishes. Customers often compare it to the parmesan, manchego and pecorino cheese. Pairs nicely with full bodied whites and tannic red wines.
